Chicken, pear & walnut salad
A lovely mix of textures & tastes in this salad. You can swap the types of nuts & seeds to your taste or availability but this combination works well.
I would also suggest that using freshly grilled chicken & warm new potatoes would add in a very delicious & comforting element especially in the colder months.
I added a little salty blue cheese when I made it again the next day and instead of pear I used apple. Yum!
Serves 2- great for a pack up.
200g cooked chicken breast
3 small boiled new potatoes
1 stick celery
1 small pear
Cut above into bite size pieces
Dressing:
1 tablespoon Greek yogurt
1 teaspoon Whole grain/dijon mustard
Mix together and add nuts & seeds
6 walnut halves
1 tbsp Sunflower seeds
1 tbsp Pumpkin seeds
Drizzle with pomegranate molasses
