Chicken, pear and walnut salad

A lovely mix of textures and tastes in this salad. You can swap the types of nuts and seeds to your availability but this combination works well.

I would also suggest that using freshly grilled chicken and warm new potatoes would add in a very delicious and comforting element especially in the colder months.

I added a little blue cheese when I made it again the next day and instead of pear I used apple.

Serves 2- great for a packed lunch

200g cooked chicken breast

3 small boiled new potatoes

1 stick celery 

1 small pear

  • Cut above into bite size pieces

Dressing:

1 tablespoon greek yogurt

1 teaspoon whole grain/dijon mustard 

  • Mix together and add nuts and seeds

6 walnut halves

1 tbsp sunflower seeds

1 tbsp pumpkin seeds

  • Drizzle with pomegranate molasses
